Butter Mochi
Mochi is a traditional Japanese rice pastry made from pounded rice that’s usually eaten during the Japanese New Year.

Butter Mochi
Yield: 24 Servings
Ingredients
1 pound (3 cups) Mochiko (sweet rice flour)
2 1/2 cups sugar
2 teaspoons baking powder
two 12-ounce cans coconut milk
5 eggs 4 ounces melted butter
1 teaspoon vanilla extract

- 1 pound mochiko
- 2 1/2 cups sugar
- 2 teaspoons baking powder
Preheat oven to 350 degrees. In large mixing bowl, combine 1 pound mochiko, 2 1/2 cups sugar, and 2 teaspoons baking powder.

- Two 12-oz cans coconut milk
- 5 eggs
- 4 ounces melted butter
- 1 teaspoon vanilla extract
In separate bowl, combine and mix two 12-oz cans coconut milk, 5 eggs, 4 ounces melted butter, and 1 teaspoon vanilla extract. Then add dry ingredients into wet and mix together gently just until there are no lumps.

Pour mixture into greased 9×13 inch cake pan. Bake for 1 hour. Cut into brownie-sized pieces and serve.
